Big Wick's Carne Guisada
Carne guisada is best described as tender, slow-stewed beef tips simmered in a rich, savory Mexican gravy. I love it so much that I even started a carne guisada cookoff right here in Lubbock to help raise money for a local charity. Side note: If you do not want to make cream gravy, or it is not one of your strong suits, there is nothing wrong with using a mix. If I am making a really big batch of carne guisada, I will use Morrison's Peppered Country Style Gravy Mix - available at Walmart and Sam's Club.
Ingredients

4 lbs. Lean Stew Meat, cut into bite-sized pieces

Big Wick’s Tex-Mex Ranch Seasoning

2 Poblanos - diced
-
6 Jalapenos - diced

2 Yellow Onions - diced

Olive Oil
-
Bacon Grease or Lard
-
All Purpose Flour
-
Whole Milk, 1-2 cups
-
Course Black Pepper
-
8oz Fire Roasted Green Chiles
-
4oz Diced Chipotle de Adobo
-
Flour Tortillas
-
Cast iron skillet or griddle
-
Crock pot
Equipment Needed:
Directions
Put meat in a bowl and season liberally with Tex Mex Ranch mix.
In a hot cast iron skillet or on griddle, add little bit of olive oil and brown the vegetables until the onions are translucent and just starting to singe on the edges.
Put the vegetables in a crock pot and set aside.
Add more oil and brown the meat until it has a nice color, then add it to the crock pot.
Add bacon grease or lard to the skillet and melt it.
Add 1-2 TBSP flour and cook, stirring constantly until browned and bubbly.
Whisk in milk and continue to stir constantly. Season with a sprinkle of course black pepper. Once the gravy has reached a nice consistency, pour into the crock pot, over the veggies & meat, and stir well.
Add fire roasted green chiles and chipotles de adobo, and stir well.
Place lid on crock pot, and cook on low for 6-8 hours until the meat is tender.
Ladle into a nice warm flour tortilla, and enjoy!
